Purchase Prices and Cost Calculation

Enter purchase prices per menu item to get automatic margin calculation, food cost and menu engineering in Analytics.
Why purchase prices? Without purchase prices you only know what you sell for – not what you earn. With purchase prices you unlock:
- Margin calculation – gross margin per item and category
- Food cost % – what share of revenue goes to raw materials
- Menu engineering – classification into Stars, Plowhorses, Puzzles and Dogs
- Profitability reports – in the Analytics dashboard
How to enter purchase price:
- Go to Admin → Meny → Produkter → Alla artiklar
- Click the item you want to edit
- Enter Inköpspris (kr) (Purchase price) according to your costing routine. For items with variants, set purchase price per variant in Varianter.
- Save
Where does it show?

Stars/Dogs matrix:

Tip: Start with your 20 best-selling items. That alone gives a good picture of your profitability. Update purchase prices quarterly or when supplier prices change.
