    Courses – Hold and Fire

    7 min read#102

With courses (Swedish: rätter) the server controls when the kitchen starts cooking. The whole order can go in at once – the kitchen sees it and can plan – but starters, mains and dessert are cooked one course at a time, on the server's signal.

The two commands mean different things:

    CommandWhat it does
Bonga (send to kitchen)Informs the kitchen. The order is visible, but courses not yet fired are marked as waiting
Framma (fire)Cook now. This, and only this, is the cook command

Sending a ticket never changes a course from waiting to "cook". That is why the classic coursing mistake cannot happen here: the whole main course does not go to the kitchen just because someone rings in a beer.

On the printed ticket a course that has not been fired carries a heading like *** HUVUDRÄTT — VÄNTAR *** (MAIN COURSE — WAITING). When you fire it, a new ticket prints with the heading *** FRAM *** (FIRE).

    Turn courses on:

    1. Go to Meny → Rätter (Menu → Courses) and click Aktivera rätter.
    2. The default courses Förrätt, Huvudrätt and Efterrätt are created automatically, along with the system course Direkt.
    3. Huvudrätt becomes the restaurant default – products without their own course land there.

The on/off toggle sits in the Rätter är på status row on the same page. (Until 2026-09-17 it lived under Bongning → Inställningar — it no longer does.)

Direkt – things that go straight away: "Direkt" is a system course for drinks and anything the guest should have immediately. Rows in Direkt are never fired: they get cook status as soon as you send the ticket. Direkt is therefore never counted in "fire next" and never in the payment warning.

Direkt cannot be deleted, archived or turned into a normal course – the database refuses. The same applies to rows under Övrigt (products with no course): they also go when you send the ticket.

Fire the next course: The main command fires the lowest course that still has something to cook. With courses switched on, Framma (fire) is the second button in the button row at the bottom, next to your own main button – for example Ta betalt (take payment). The button shows what it will do, for example Framma · Huvudrätt · 4 (fire · main course · 4), so you see the target before pressing. When there is nothing left to fire it disappears, and your own button takes the full width.

In the POS settings (Snabbknappar → Huvudknapp) you then choose only one button of your own – the second slot is reserved for Framma while courses are on. A second button you saved earlier is kept and comes back if you switch courses off.

Each course that has something to fire also has its own Framma button on its row in the tab. The next course in order has a filled button – it does the same as the button at the bottom. Other courses have a lighter button that fires just that course, if you want to skip ahead.

Collapsing a course: Tap a course's row to collapse it, and tap again to expand. A course that has been fully fired collapses by itself, so the tab shows what remains. Add something to a collapsed course and it opens again, so you see what you just rang in.

If you fire a course while an earlier one is still waiting, the POS asks first: "Förrätt är inte frammad" with the options Framma alla (fire all), Bara huvudrätt (main course only) and Avbryt (cancel).

    Course status on the tab:

    What you seeWhat it means
The course name, a count and a Framma buttonThe course has not been fired yet. Filled button = next course in order
A chef's hat and for example 3 st, collapsedThe whole course has been sent to the kitchen to cook
Expanded with a Framma button although part of it has gone to the kitchenPartly fired – press the fire button to send the rest as an addition
går vid bongningDirekt and Övrigt – they go when you send the ticket

A course that has already been fired and then gets new rows can be fired again. That prints an addition ticket with only what is new, so the kitchen does not remake what it already cooked.

Hold a single row: Individual rows can be set to Vänta (hold) when they should not follow the course: tap the row and choose the Rätt (course) tab. This is done before the row is sent to the kitchen. A held row is never sent to the kitchen – neither when you send the ticket nor when you fire – until you release it. Release it after the course was fired and it goes along as an addition next time you fire.

Paying with courses still in the queue: If the tab has courses that were never fired, the POS warns you at payment. In the payment view you get three options: Framma nu (fire now), Betala ändå (pay anyway) or Avbryt. The cash and card quick buttons never stop – you get a notification that shows for a few seconds and can be dismissed straight away. If it disappears before you read it, you find it under Senaste notiser (latest notifications) in the POS menu.

Payment is never blocked. A guest who wants to leave must be able to pay, and courses can be fired after the tab is paid.

What sending a ticket prints – four modes: Under Bongning → Inställningar you choose what a ticket dispatch prints. The mode can be set for the whole restaurant and overridden per station.

    ModeWhat is printed
Bara nya/ändradeOnly what is new or changed since the last ticket. Default
Hel bong första fire, sedan bara ändringarThe first ticket shows the whole order, then only changes
Hel bong varje gångThe whole order every time, with new rows marked NY
Bara vid framningSending only prints drinks and Direkt. Course items print when you fire

What firing prints: The fire ticket can contain either the course's items in a smaller style (default), or just *** FRAM ***, the course name and the table. That choice can also be set per station.

Bara vid framning cannot be combined with a fire ticket without items – the station would never see what to cook. The POS refuses to save that combination and tells you why.

Notify other stations: A station can be configured to notify other stations when a course is fired to it. The notice is short and contains no items, along the lines of "HUVUDRÄTT FRAMMAD · Bord 7". Stations that receive items in the same firing get no extra notice, and a notice never triggers further notices.

On the kitchen display: KDS distinguishes informed from fired. Each course group on the ticket carries a marker for whether the course has been fired or is still waiting, so the kitchen knows what it may start on.

Courses apply to table tabs. Courses belong to a tab that is linked to a table. A loose tab rung up at the register never gets a course – neither do takeaway and delivery. Those rows are always treated as "now" and go straight through when the ticket is sent. The reason is practical: firing assumes someone walks back to the table once the guests have finished the previous course, and a register tab has no table to walk back to. Changing the order type mid-order changes how the next dispatch behaves; rows already fired stay fired.

If you press Framma on a tab you have not sent yet, the order goes to the kitchen first and the fire ticket follows. The kitchen never receives a cooking command for an order it has not seen.

Tip: Start with the default Förrätt/Huvudrätt/Efterrätt set and the Bara nya/ändrade mode. Change only when the kitchen asks for something else – every mode changes what comes out on paper.
