    Waste Report – Recorded Waste and Estimated Costs

    Open Analytics++ → Kostnader & meny → Svinn and choose a period. The report shows stock movements recorded as waste. Record the waste in Lager; this report does not create waste entries.

    Choose a selection

    The period follows registration time, using the restaurant's trading day in Swedish local time. This is not necessarily when an ingredient was actually discarded. Filter by item, category or missing cost price to focus your follow-up. Selections can include former or archived items with movements in the period.

    Read quantity and costs

    • Cost: estimated cost for records with current cost prices excluding VAT.
    • Recorded quantity: read quantities with their units. Different units must not be added as if everything were individual pieces.
    • Missing cost prices: records whose cost cannot be calculated. A missing price does not mean zero cost.

    Ingredients and unknown objects are not automatically valued as unit-based menu items. Check coverage before interpreting the total. Updated cost prices can change an earlier period when viewed again.

    Follow up patterns

    The daily chart shows number of registrations, not the number of discarded units. The item table shows quantities, registrations and known estimated costs, with the highest known cost first.

    Reasons come from free-text notes. Different wordings are not automatically combined. Use consistent recording routines to make follow-up easier, and inspect records before drawing conclusions.

    No records means no recorded waste, not proof that no waste occurred. The report is not a complete stocktake or an accounting consumption statement.

    Export

    Click CSV with export permission. The export includes items, quantities, units, registration counts, known costs and missing-price counts, together with the period and filters. Use it to choose a concrete improvement and follow up the same selection next period.
