Spring takeaway: build a menu for the park

How can a restaurant without a large terrace develop takeaway?

Choose food that travels well, test the packaging and make ordering and collection clear. Include packaging, payment and handling in the calculation and match order volumes to kitchen capacity.

A restaurant does not need a large terrace to offer a good meal for spring days outdoors. A carefully designed takeaway menu can suit guests eating in a park, by the water or at home.

Start with the food after its journey. A dish that works on a plate may become soggy, leak or be difficult to eat from a container. Begin with a small selection and test it yourself.

    Test the complete picnic meal

Pack an order as a guest would receive it and check it after a realistic travel time. Separate crisp components from sauces and liquids. Assess temperature, safe handling and packaging suitability under the restaurant’s procedures; warm spring weather is not a reason to overlook them.

A meal for two should clearly describe contents, portions and options. Show what is included in the price and make contact details for allergen questions easy to find.

    Calculate the cost per order

Include ingredients, packaging, napkins and any additional packing time. Add payment charges and ordering software costs. An owned channel can have a different cost structure from a marketplace, but it is not free and guests still need to find it.

Compare actual channel agreements. A percentage commission normally applies to an agreed sales base; it is not the same as the percentage of profit lost.

Make collection as clear as the menu

Vendion Online lets guests order through the restaurant’s own ordering page. Show opening hours, address, collection point and how orders are confirmed. Check which updates guests receive in your setup and how staff handle delays.

Offer collection times based on what the kitchen can deliver. Plan packing and handover alongside dining room orders. A separate collection shelf or counter may help prevent waiting guests from obstructing service.

    Show the food in context

Use your own photographs of the packed order and meal. Link directly to ordering from your website and social channels. A QR code on a receipt or sign inside your premises can make the link easy to find.

Avoid making every message a discount. Clear contents, dependable collection and food that retains its quality are good reasons for guests to choose you.

    Review a limited trial

Start with a few dishes during defined shifts. Track order numbers, contribution after order-related costs, delays and remade food. Ask guests how dishes travelled and adjust the menu using their feedback.
